Biking Home

Driving a car every day to work is a bit strange. It has been a couple years now since I have had to do that.
I kind of prided myself on doing my part to keep my carbon foot print small.
I had pondered public stransportation, but this side of the light rail route stops at every exit on the highway…  20 minute car ride, vs 10 min bike or 20 min walk to the train station, 30 minute ride, 5 minute bus ride (if i could figure that part out), or an 8 minute bike ride to the office. Wowo!  Without the ability to really gain anything personally while doing that commute, i just couldn’t stomach it. (can’t blog if i have my bike – since you have to stay with you bike the whole time.) I could read…
With their recent decree that i should be there prior to 8am and ready to work, the train commute just wasn’t going to fit into my schedule. My gym doesn’t open till 5:30, so with an hour work out plus shower…  not gonna happen!

But i did think i should do my part and i looked up the bike route home. There is a great set of trails all over denver and beyond.
Hubby and I did a dry run over the long weekend – 18 miles, 2 hours. I figured i could get that time down since some of it was getting lost and lolly gagging along. We don’t usually have any place to be when we ride our bikes, so my mind frame would have to change.

I decided i would try to bike at least 1 day week. Meaning train it to work, ride the 18 miles home – skipping the gym since that would be my workout for the day.

This past friday was the first attempt alone.
I did ask hubby to ride with me to the train station so i wouldn’t have to be alone on that part! He gladly accepted the challenge, since it meant he got to sleep in and not have to go to the gym! He was thrilled!

We arrived at the train station too late and too early. Meaning I had 15 minutes to wait for the next train (me being type A – i’m calculating the time that i am spending and thinking that i could be at work by the time the train arrives… sigh)

As we are waiting we are noticing a large amount of bikers arriving. This is a concern because there are only so many “spots” on the train. Bikes are only allowed at the beginning and end of each car and not by the driver and only 2 per site. I was at the very first train stop, so that is a plus, but still… I got on from one side of the train and so did another fella. A couple stops later another fella got on – so we were up to 3 bikes in 1 spot, i wasn’t sure what would happen, but luckily the RTD police were not around that morning to kick anyone off!

It was definitely a different feeling to ride with a laptop on your back -especially a 15 inch heavy bugger!

I didn’t dress the part to get to work since it was only 2 miles to union station and a little over a mile to work from the train stop.
After my work day was over i put on my cushy butt pants (which unfortunately since i lost so much weight are not fitting and causing more issues than they are solving – time to go shopping), my tank top to get some sun on my arms (it was 80 degrees ya know), sunblock, and headed on home.

Took me about an hour and 20 minutes, which i am still sure i can cut down – i still spent a bit of time lolly gagging, forgetting i had a purpose, and forgetting to up my gear range on the flat parts! It was a very nice ride and i managed to get on the bike path before most exercisers, it tends to get crowded in places.

I made it to the bar where hubby and some friends were by 5:38! Still time for happy hour! Only a mile from home.
I was definitely sweaty, and feel i did a bit of exercise!

All natural Remidies…

Saw this in last sunday’s paper and had to repost it here for when i do one of these things and need something to fix it!

None of these have specific instructions but it definitely sounds interesting!

  • To soothe sunburn:
    • apply a mixture of whipped egg and a teaspoon of castor oil.(who ever has castor oil in the house? – brings back images of tom and jerry cartoons!
    • add a handful of baking soda to a warm water bath and soak for a while

  • For pesky mosquito bites:
    • apply vinegar on a cotton ball to the itchy area (not sure difference between that an rubbing alcohol…)

  • Beat bee stings:
    • applying a paste of baking soda and water to the affected area (one i stop screaming and running in circles)

  • Poison ivy:
    • to reduce discomfort, rub the inside of a banana peel to the rash. Should reduce the discomfort within a few days.  (should?  hmmmm – think I’ll stick to the “Leaves of three let it be!”)

Saturday BBQ

We had some dear friend over for a BBQ on saturday. The brought their little fella – a bit over 1 years old.
We had our fingers crossed that we would stick to the roof so that way I didn’t have to baby proof the rest of the house.
It also meant i could go hiking in the middle of the day when i should have been picking up and putting away…
Alas just as the burgers went on the grill – bam – the skys opened up. Ugh!!

Figures!

We did a fire bucket brigade to get everything into the house and kept dry! But that meant we now had to coral the wee one, keep him from falling in the stairwells, keep him from going up the stairs – the house is pretty much a death trap for mobile wee ones!

If I do say so myself – hubby and i created some damn good burgers!
1 lb ground turkey
1 pkg onion soup mix
1/4 cup water
To taste:
Southwest seasoning
Habenero pepper flakes
cayenne
seasoning salt
garlic powder

We were able to make 6 burgers – probably more if we hadn’t split the batch to keep the hot from infecting our friends!

They came out really great! We will now be making burgers more often, now that we know we can do it!
To add to the feast I made the sundried tomatoe hummus – changed it up a bit – used 1/2 cup chicken broth instead of water and olive oil. Came out yummy!
Also had a spinach salad with out cilantro dressing – the old stand by!
Made some beer muffins – i have determined that i cannot eat a ton of them – they upset my tummy when i snarf them down – go figure!

We ended the evening with some games. We did Apples to Apples – and with 2 couples – pretty hard, depending what cards you have in your hands.
Then we found another game call Imagine If…

it had been sitting in our game pile for i don’t know how long, and we can’t remeber who gave it to us – but that is a great game! We were laughing so hard, and having such a fun time it was fabulous!

Hiking Mt Sanitas

Hike Mt Sanitas
Saturday I made it to my first farmers market of the season – woohoo!
I got summer squash, giant green onions, a red pepper and a yellow pepper, a pound of tomatillos, and bunch of cilantro – all for under 8 dollars! Woohoo!
I was tricked on the summer squash, they molded by today – sigh…
I’ll be more diligent next time!
I got the tomatillos to make something i had been holding the recipe on for over 2 years! Every time i went to make it the tomatillos were $1 a piece and i needed 8 for the recipe… so it was put on the back burner! But now was the time!

Shortly after I returned home my friend L asked if I wanted to go for a hike. I debated for a smidge (we had friend coming over at 4pm for a BBQ).
I decided to give hubby a list and head off to the mountains!

Stairs, stairs, stairsWe did a 3.2 mile loop and I didn’t read the description in my book as well as i should have and started to the right, which meant it was a giant stair climber…  Reminded me of Mt Monadnoc in New Hampshire. Love that hike. Anyway – it felt good to drag my body up the mountain.

The climbing of the steps were a great workout! The views were great, and some of the houses up there were amazing! Great workout!

Green Enchiladas With Crab

I’ve been wanting to make this recipe for over 2 years and had been thwarted by the price of tomatillos. Saturday was the day that the angels sang and i found tomatillos at the farmers market for 3.00 a pound! Woohoo!
I did of course have to change it up! I only had big wheat tortillas, i didn’t de-seed the seranno – damn! did the sauce have kick, I didn’t have any lettuce or radish – so i cut up some spinach, and i didn’t have the right cheese so i used nacho taco cheese. Next time i would definitely get the right tortillas, get some more powerful cheese, maybe add some black beans or rice to it, and seed half the pepper. Definitely a recipe you can play with!! Hope you have fun with it! And the sauce makes a ton – we’ll be trying it on our ground turkey tacos this week as well!

4 servings (serving size: 2 enchiladas, 3/4 cup topping, and about 1/3 cup sauce)

Ingredients

  • Sauce:
  • 8  medium tomatillos
  • 2  quarts water
  • 1/4  cup  chopped peeled avocado
  • 2  tablespoons  minced fresh cilantro
  • 1  tablespoon  fresh lime juice
  • 1/4  teaspoon  salt
  • 1  serrano chile, seeded
  • 1  garlic clove, minced
  • Enchiladas:
  • 1/2  cup  (2 ounces) shredded queso chihuahua cheese
  • 1/4  teaspoon  salt
  • 1  pound  lump crabmeat, drained and shell pieces removed
  • 8  (6-inch) corn tortillas
  • Cooking spray
  • Topping:
  • 2  cups  thinly sliced iceberg lettuce
  • 1/2  cup  thinly vertically sliced onion
  • 1/4  cup  thinly sliced radishes
  • 2  tablespoons  minced fresh cilantro
  • 2  teaspoons  white vinegar
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  dried oregano

Preparation

Preheat oven to 375°.

To prepare sauce, discard husks and stems from tomatillos. Bring 2 quarts water to a boil in a large Dutch oven. Add tomatillos; cook 2 minutes. Drain. Place tomatillos, avocado, and next 5 ingredients (avocado through garlic) in a blender; process until smooth. Strain mixture through a sieve into a medium bowl; discard solids.

To prepare enchiladas, combine the cheese, 1/4 teaspoon salt, and crab. Warm tortillas according to package directions. Spoon about 1/2 cup crab mixture down center of each tortilla; roll up. Place, seam-side down, in an 11 x 7-inch baking dish coated with cooking spray. Cover and bake at 375° for 12 minutes or until thoroughly heated.

To prepare topping, combine lettuce and remaining ingredients. Serve enchiladas with sauce and topping.

Is it tuesday already??

I’m out in Indianapolis helping hubby and Tom with their conference.
I took a late night flight Friday to make sure i was able to finish my work week.
It was an ity bity plane. 2 by 2… ooofa. I was over the wing but decided not to look out the window cause when i did i could see the wings flapping in the wind!!!

A cool thing the flight crew did was to move a gentleman from the army to first class. I thought that was really awesome!

Saturday we prepped for the conference. Filled the conf bags with all the goodies. Hope everyone likes them!

I’ve managed to get my Dunkin Donuts fix as well as my Starbucks, so i am good to go!

A little tuckered out from the early morning and late nights, but i’ll be home tonight and tomorrow I start my new job!  Yeah!

I generally fly frontier. I have the most miles built up there, i have their credit card, i can get where i most need to go on their non-stop routes.
But not this time.

I was in the process of getting a new job, worried about the money it would cost for the sitter and extras, and just unsure if i should go. Torn by my commitment to support my hubby and to support my household. I ended up deciding to short change everyone! I would help hubby through the first couple days of the conference, and then start the new job mid week. Seemed good for everyone.

But that means I decided late. That means that frontier has some crazy prices – 450 one way to Indy… ooofa.
So i found a heck of a cheaper flight on United Airlines.

Tonight i went through the online check in process…  Holy guacamole. Every screen there is an option to “upgrade”
Extra Leg Room – 39 bucks
Premier Line at Security – 39 bucks  (seriously you can buy this?)
Any checked bags – hand over the cash.
I was just in shock at how much they try and trick you – your “cheap” flight could soon be almost twice the cost – woah!!!

When people first started talking a-la cart – i was thinking better choices of food…  sigh.

I guess better be able to pick what you want – it just seemed like i was being nickled and dimmed as i was simply attempting to check in!!

Weekend Cookout!

Saturday we had friends up who had yet to see the place in the nice weather and therefore had not enjoyed the roof top deck. They adopted an adorable little boy in December and as luck and mr murphy would have it are now pregnant with number 2!

I whipped up a feast, the newest recipe was Garlic and Sun-Dried Tomato Hummus – which was on a lark since i wasn’t sure hubby would like it since it had the dreaded tomatoes in it! But he loved it – so it rises in stature to the “saved recipes” file on cooking light as well as into the list of reipes to have printed for the Taste Book!

We did our favorite Beer Can Chicken – brined for a good 36 hours prior! Mmmmm! And then lovingly slathered with Love Rub.

While the bird was sizzling away on the grill we started in on the Hummus and the Layered Chili Cheese and Corn Dip. I love dips! This time I added Jalapenos to the Layered Dip – but they didn’t add too much flavor. Poop.

I also whipped up a set of the Beer Bread in muffin format and added a ton of fresh Jalapenos – which this time were quite evident! My lips were on fire when I tested them!

They brought some side salads and I did my favorite Asian Cucumber Salad!

We enjoyed the sunshine and the company!

Garlic and Sun-Dried Tomato Hummus

I found this number in my saved recipes to try this weekend when I discovered I had no Kalmata olives for our old stand by – Mediteranean Hummus! I also ended up using a bit of the oil that the tomatoes were packed in for some liquid in the hummus. Definitely yummy and even hubby enjoyed it and he doesn’t like any kind of tomatoes!

Yield

5 servings (serving size: 1/4 cup hummus and 4 pita wedges)

Ingredients

  • 1/4  cup  water
  • 2  tablespoons  chopped oil-packed sun-dried tomato halves
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  freshly ground black pepper
  • 2  garlic cloves
  • 1  (15-ounce) can chickpeas (garbanzo beans), drained

Preparation

Combine water, tomato, salt, pepper, garlic, and beans in a food processor, and process until smooth. Serve with pita wedges.

Asian Chicken Salad

Found this lovely in my old pile of cooking lights! I of course changed it, cause i never have the ingredients i need, nor can I leave things alone!

It was  for left over turkey – but we had just done beer can chicken, it said a head of cabbage, but i find the bag-o-slaw so much easier to deal with!  Next time i’ll bump up the heat on the dressing – perhaps jalapeno or some red pepper flakes… and some additional salt! I set it up for lunch, so i separate everything into 4 food buckets. Slaw in the bottom, red onion in it’s own baggies, green peppers (since red were 1.99 a piece) just cut up on top of slaw, chicken diced and separated into baggie and the dressing split into 4 little containers – yes i am a nut!  I skipped the cilantro, green onion and peanuts as well!

4 servings (serving size: 1 3/4 cups)

Ingredients

  • Dressing:
  • 1/4  cup  rice vinegar
  • 1/4  cup  vegetable broth
  • 1  tablespoon  low-sodium soy sauce
  • 2  teaspoons  bottled ground fresh ginger (such as Spice World)
  • 2  teaspoons  lime juice
  • 1  teaspoon  bottled minced garlic
  • 1  teaspoon  peanut oil
  • 1  teaspoon  sesame oil
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  sugar
  • 1  serrano chile  (maybe 2 next time or a jalapeno)
  • Salad:
  • 4  cups  thinly sliced napa (Chinese) cabbage  (1 bag o slaw)
  • 3  cups  shredded cooked turkey  (or left over beer can chicken)
  • 1  cup  red bell pepper strips (about 1 small pepper) (i did chunks, easier to eat)
  • 1/2  cup  thinly sliced red onion
  • 1/2  cup  chopped fresh cilantro  (skipped it)
  • 1/4  cup  sliced green onions  (skipped it)
  • 1  tablespoon  dry-roasted peanuts, chopped  (don’t like nuts on my food)

Preparation

To prepare the salad dressing, place the first 11 ingredients in a blender, and process until smooth.

To prepare the salad, combine the cabbage and remaining ingredients in a large bowl, and pour the dressing over the salad, tossing to coat.
