Disney Day 3 – Happy Birthday Claudia!!!!

We got up in time to get to the Magic Kingdom when the gates opened! We stopped at will call to get momClaudia’s free pass and her birthday pin!!!  Yeah!

Having that pin was the best! Everyone said happy birthday! One cast member even sang it! And tons of people in the park visiting added their good wishes as well! There were a lot of people in the park with their birthday on Feb 9th!

We started in Tomorrow Land – making sure we the buzz light year ride -which is now disappointing compared to the midway ride in Hollywood,fast pass for space mountain, the stitchride, and laugh floor

We got to see the new Haunted Mansion – looks very cool on the outside and most of the inside is still the same!
We skipped the Tiki room since they ruined it with the "under newmanagement" portion that includes the bird from Aladdin, and the onefrom Lion King – blech
But we did do the Jungle Cruise, Pirates of the Caribbean with Johnny Dep included, and big Thunder Mountain!
We lucked out on dining and beat the crowds. They had a new sandwich(to me) – hummus and tomato on toasted wheat bread with broccoli slaw.Very tasty – very garlicky – bring a mint!

After lunch I even got my Dole Whip! Mmmmm! Love it, love it, love it! 

Around 3:30 we were shopped out and ride-ed out and decided to drop off our purchases before momClaudia’s big dinner!!

We arrived at Downtown Disney with almost 2 hours to spare. We poked inthe shops, got samples at Ghiradelli’s, and even found the "10 dollar"store.

Dinner was at Fulton’s Crab Shack – momClaudia chose seafood for her big celebration!
Our server was very pleasant and teased momClaudia about singing for her and bought here a piece of cake for her birthday.


We had seats right by the window and got a mini fire work show over the hotels across the way! Yeah!

We did some souvenir shopping on the way out and grabbed a new ornament for the Christmas tree!

It was a really tasty dinner and I think a great way to celebrate momClaudia’s big day!!

Chicken Pesto Spirals

So this started out as a Cooking Light recipe and then….

Well, I’m lucky that I can modify, substitute, and generally mess with a recipe with usually successful results…  Must be grandpa’s Italian heritage coming through the gene pool!

This recipe called for it’s own version of pesto with basil and parsley…  Well – I had cilantro cause i had made my most favorite Chili Cilantro Dressing

But I knew I had a recipe for cilantro pesto and i could definitely use that here.

As I was gathering my ingredients I realized I had no pine nuts…  Hrmph.

I had no almonds…  Hrmph…

But I did have pumpkin seeds – remember the Chili Cilantro dressing???

So I substituted pumpkin seeds into the lovely recipe, added some red pepper flakes…  and whala – some garlic ridden yumminess that was green and would go great in my chicken spirals!

The original recipe called for pounding the chicken, putting in the pesto and then salt and peppering it.  That just would not do. So I pounded, salt and peppered, pesto-ed, rolled, added more pesto on top and then cooked!

My Chicken Pesto Spirals

2 chicken breasts

Salt and Pepper to taste

1 cilantro pesto recipe

Tooth picks

Preparation:

Preheat oven to 375

Prepare small pyrex – coat with pam

Pound chicken breasts thin

Salt and pepper both sides

Put 1/4 of the pesto on each breasts (i don’t do just the middle, i hate having a piece of a roll with no filling – it get’s messy, but hey it’s worth it)

Roll breast, tuck in ends if possible, secure with tooth picks, put seam side down in prepared pan

Continue with second breast.

Put 1/4 of the pesto on top of both rolls

Cook for 15 minutes

Roll breast to other side, place last of the pesto on top of each beast.

Cook for 15 minutes.

It took almost 45 minutes for my chicken to be cooked all the way through – original recipe stated only 30 minutes – probably depends on how thin you pounded the chicken. I also had to chill my chicken for an extra hour in the fridge before cooking it. (timing was off on when dinner would be)  Just check the temp – 170 degrees.

Also take care with the pesto and don’t contaminate it with the spoon or what not that you touch the chicken with.

 

 

I really enjoyed the results, I added in some cheesy scalloped potatoes (from the box) and did another beer bread with diced green chilies, cayene powder on the cooked onions, coors lite, and nacho/taco cheese. LOVE this recipe – just throw in whatever you want!

 

Whirlwind weekend

Whirlwind weekend

This weekend we were in Irvine, CA. Hubby had a conference to run and I was all about taking advantage of the free hotel room!

Wearrived around 7, and had the hertz gold action going and no checkedbacks, so we cruised right out onto the 405 in record time!!
Myfriend Laura and Mike (the ones that got married in Big Sur) were ondeck for dinner! Hubby wanted Round Table – i could do without thecalories involved in an outing to Round Table. Laura ended up being theone to have to pick where to eat, so she went with their favorite sushiplace. Full Moon sushi. We enjoyed some yummy sushi (some not so yummy- but they took it off the bill) and some Japanese beverages!
Afterstuffing ourselves there, they wanted to show off their next most favorite dining experience – yogurt land. Oh my! I was able to contain myself by knowing it was a big bowl – a waaay too big bowl, so i put aslittle in as possible to get a good taste!

By the end of the night we were pooped! Still on Denver time – 11pm is late for me!

The next morning hubby I got our breakfast from Starbucks, and headed overto Boeing for his conference.

I hung out for a while, but there was no-one there to open the doors. I eventually left him to figure it outso i could start my day of fun!!

I first headed to see my "kids". I got some kisses and slobbers. We played some ball. And we took a walk too!
The time came too an end waaay too fast.

My next stop was to see my friend C and her twins. Last time i had seen them in person I was here for the baby shower which turned into thebaby birth and they were in their little warmers in the neo-natle area. 
I hung out and played with the little buggers for a bit and then C and I headed to lunch and our massage appointments…  Mmmmm!
We went to Tortilla Flats which is right on Mission Viejo Lake and then to Spa Tisari. I had a tough time relaxing enough to enjoy it completely- my second cup of coffee when i was visiting with Mo and Scoot just put me into over drive!

After our relaxing afternoon I headed to see my friend Sunshine at his wine locker. He had offered up some tastes of his stock. Don’t ever turn that down!
That turned into an impromptu party with the other locker owners. I tasted some really good and really expensive wine!
Even a 63 Fonseca port! Mmmm! Hubby was jealous!!!

Hubby and I eventually connected back up at his after conference pizza party at – yup you guessed it – Round Table Pizza!

It was a long long long day, but i loved it all!

The next day was still packed! We stopped by kim’s place – she had had a deviated septum operation and couldn’t come out and play over the weekend.
It was nice to sit and chat but never long enough!
Next was Robbins Brothers to get my diamond checked. It’s doing fine and is now sparkling brightly!


And then we ran out of time to stop and see the kids again.  :(

We ate lunch at the new little asian meca built off Jamboree but it was crazy busy so we ate at the Greek Restaurant! 

The flights were both annoying! On the way to OC there was an employee with 2 little ones taking up the bulk head seats and apparently had no experience dealing with his own children. They yelled and screamed and cried and were generally disruptive the entire time. Sigh. Some parents are just not really good outdoor parents! They have no idea on how to control their own children.
On the way back to Denver we have the privileged of sitting across from a self absorbed, yuppy family with a small child.
They expected to just be given an extra seat even though they didn’t pay for it. Then the mother also thought it would be enjoyable for everyone if she sang and talked to and about her daughter in an extremely loud voice. Ugh! I really hate people!!

Doing my part (kinda)

I got this email yesterday and thought it was pretty cool. I had forgotten i have signed up for paperless, since i really only interface with them once a year (besides the time the guy turned left from the right lane…)

In 2008 alone, just by enrolling in our Paperless program, Progressive’s customers sponsored the following replanting projects:

  • Modoc National Forest (California/Oregon)
    []133,905 Ponderosa Pine, Jeffery Pine, and Native Washoe trees were planted to replace those lost to recent wildfires. These trees will provide critical habitats for northern goshawk, osprey, great grey owls, and bald eagles.

  • John M. Bethea State Forest (Florida)
    [][]113,724 Longleaf Pine and Slash Pine trees were planted
    to replace those lost to fire. These trees will provide wildlife habitats for not only Florida Black Bears, but Red-Cockaded Woodpeckers and Bachman’s Sparrows too.

And there’s more planned for 2009…
We’re already hard at work with the Arbor Day Foundation on replanting projects in Georgia and South Carolina and, with more states to come, we won’t rest until we’ve planted at least one million trees! Stay tuned, and thanks for choosing (and being) Progressive.

Not so wordless wednesday

So this is really for mom.

When she was here for christmas we made a joke about the homelss meters, and mom was intrigued. Of course after that mention, we never saw another to show her.

Happy New Year

Ella has left the building…  :(

Ella has a new destination and a new place to explore! She is departingin the big brown truck and should arrive by the end of the week!

So i guess i need to make my own fun now!

The house is almost back to my normal amount of mess. That is part ofour new process for the new year. Keep the counter clear (fingerscrossed on that one!), and keep all the flat surfaces on the firstfloor clear of clutter. Again… cross your fingers.
I’m thinking that lack of "mess" will give me more of an easy feelingso i can again dable in the arts – a.k.a the garage studio.

New years was pretty low key again. We like it that way!
We visited a friend’s local for make your own pizza’s, yummy wine, and this horrible came called pain point- catch phrase.

Basically it’s like 40 thousand dollar pyramid. but with this machine you have to hold that beeps and continues to beep faster and faster and then times up!! ARG! I did not want to play. I prefer watching games like that. Or at least be with people i know so i can use clues that we have a common thread on. But i had no choice due to my gender, apparently it was decided boys against girls was a fabulous idea… (yes i am being a big old baby!)

Hubby tried to help me (he wasn’t one of the chosen since they had enough of his gender),but he was too busy laughing at my inability to speak. We made it through plenty of rounds of that and then rung in the new year! Cheers,champagne and kisses! Yeah!  We left pretty soon after to beat the drunkards home.
