Pumpkin Seeds

Fresh Roasted Pumpkin Seeds!

Ingredients:

  • Pumpkin seeds from a fresh pumpkin
  • Oil – olive, spicy or not, enough to cover the seeds
  • 1-2 tsp Cayenne Powder
  • 1-2 tsp Kosher Salt

Preparation:

  • Remove all goo and strings from seeds.
  • Place in a bowl of cold water, swish around
  • Dry for a couple hours
  • Preheat oven to 325
  • Place seeds in a small bowl, sprinkle with oil – stir to coat
  • Sprinkle spices – stir to coat
  • Place on jelly roll pan – spread them out
  • Cook for 20-45 minutes. Depending on amount of doneness you prefer!

My second batch i grabbed the wrong bottle of oil and got sesame oil – it worked out fine!

Basically i think all kinds of roasted seeds are a vessel to get as much salt into the body as possible, so i’m going to experiment with different flavors and try to cut down on the salt. I have 2 more pumpkins to gut unless i hit walmart again for more $1 pumpkins! Then i can try all kinds of different stuff – maybe the horseradish powder i have sitting in the cabinet… hmmmm

Still need a bigger freezer for all the pumpkin mush….

Pumpkin mush

I learned a thing or 2 about butt issue and dogs since we got the pups. It was the same issue my mojo had but we never knew what it was.

Here is some TMI:

Basically the dogs have a little “sac” that gets released when they poop. Sometimes this doesn’t always happen and then they have, as we call in my house, “leaky butt”

To alleviate this, the vets suggest pumpkin. Well canned pumpkin is about 2.69 a can. I was in walmart a while back and they had squash (same thing as a pumkin, right?) for 44 cents a pound, so i bought a bunch and learned how to get it done in a crock pot! Woot!

A couple weeks ago i was in costco and there was a big old box of yam/sweet potatoes (same thing as a pumpkin, right?) for what ended up at 67 cents a pound, so i bought it up! Hello 10 pounds of yams!

Since i’ve done most every other veggie in the crock pot including corn (super easy, pull leaves back, slather butter and cayene or what not, put leaves back, wrap in foil, put in crock pot for 4 hours) i decided to give the yams a try.

I wrapped them up in foil, placed them gently in the crock pot with a ramikan full of water and turned the bad boy on for about 8 hours. And whala – OMG good! Some of those wondrous mashed sweet potato did not make it into the freezer for the boys! Great idea for potatoes in the summer to i say!

Recently we had a pumpkin carving night at hubby’s co-working space, put on by Yelp Denver and there was a left over pumpkin. I volunteered to save the poor fella from a smashin!

So it’s been sitting in the house, staring at me since then…

Tuesday I was working from home and said, lets give this a shot..

I looked up on line how to “cook” a pumpkin. Basically no-one had a crock pot option. So i decided to follow the butternut way. Obviously this was not a small pumpkin, in fact it took me 3 rounds of 5 hours to get the whole thing cooked!

Preparation:

Basically you cut the pumpkin in half with a bread knife in a sawing motion since a smooth knife might remove a finger or 2 if you slip (fyi – my bread knife, cuts in a circle…  boo)

Remove the seeds into a bowl of water – save for later, see the next post (ice cream scoop is a wonderful tool here)

Put whatever pieces of pumpkin will fit in  your crock pot, fill the bottom with water, enough so it will steam but not cover the pumpkin.

Turn on low for 5-8 hours.

Let it cool (i am too impatient and i was doing a bit of oooh, hot hot hot, as i scraped the mush out)

Remove the mush into a bowl (again the ice cream scoop is amazing for this part!) Mash to consistency desired. Freeze in whatever format is best for your needs (for me it’s the same as chicken broth, old yogurt containers! Boys usually go thru 1 container in a week)

From the smaller half of my pumpkin i got five 6oz containers full of mush!

The boys loved the tastings they got as the pumpkin was being cooked throughout the day! We’ll be covered though a number of months with all these veggies!

I was at walmart that night and saw that the pumpkins were on sale – $1 a piece! Hello!!! I think i need a bigger freezer!

Kim’s Wedding

October 29th was the day. The day one of my dearest and most precious friends tied the knot. The day I saw a smile on her face, a smile that was so big and so wide and just so wonderful!

It was a wonderful evening, spent enjoying the new couple, old friends and oh my gawd – fabulous food!

400 feet up in a balloon!

Every time i would return to Orange County to visit my friend Kim she talked about the Orange Balloon. I was never too excited to, cause i never really understood what it was all about!

Saturday we had a little time before hanging with our friend sunshine and before “the wedding”!

I looked up the Great Park of Orange County. and it looked like something that could be done in an hour or 2.

The balloon is a giant balloon that carries a circular base that can hold up to 30 people, and floats up 400 feet, with a view of the old El Toro air base!

Views were spectacular, but DAMN is it scary to start. I was gripping the sides for deal life, wishing i hadn’t decided to do this, ignoring the hubby when he pointed straight down and said wow, look at that! Eventually I calmed down and enjoyed the view and the fun to be had!

One of the other things there to do was to ride a carousel!

The first thing we did was the time line which was very interesting and weird! It listed from prior to 1930, thru the creation of El Toro, included the bombing of Pearl Harbor and other historical and war related information.

It was a really fun time and i would recommend it to anyone else cruising “the oc”

Mt Rubidoux

We were out in Orange County last week and we decided to go out and experience parts of the area that we used to visit or hadn’t visited before.

Friday we were needing to be out in Corona to see a friend’s new brewery, and being princesses about traffic we headed out waaay early!

I saw a cute little hike out in Riverside – Mt Rubidoux, just a 3 mile loop to a giant cross and a peace tower!

We thought it would be easy and fun – it was, but it was also an 80 degree day out in the inland empire, but we were very surprised that we had not found this before and sad that we had live there and had missed this cute little hike that was right in town!

Up up up we go!

It was a relaxing, fun time with the hubby! (if only we had remembered to bring water… oy, being from Colorado and always carrying water with me was weird i didn’t have any)

I was in The “OC” over the weekend and they decorated the “orange balloon” for the season and it looked like it was eating the building! Cracked me up!

I did also ride that thing – oy – 400 feet up in the air – i was scared to death till it was almost over and then it was fun! Typical me!

(just realized this never was posted yesterday, on halloween… doh)

Sour Cream Raspberry Swirl Loaf

“Stuffed” bread is not normally something i’m a fan of.

But i had some sour cream that was due to be out before i had any plans of using it… I adapted a recipe from CL

The first time i made it, i used some La Madelaine raspberry rhubarb preserves. WOW! Great!

The second time i made it, I used strawberry preserves and splenda – and i gotta say it did not work as well – i think it was the splenda, not the cheap jelly, but i’ll have to make one more to confirm!

Ingredients

  • 1/3 cup seedless raspberry jam – or your favorite preserve
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3/4 cup sugar
  • 1/4 cup butter, softened
  • 2 teaspoons grated lemon rind
  • 1 1/8 teaspoons vanilla extract, divided
  • 1 large egg
  • 1 large egg white
  • 3/4 cup fat-free sour cream
  • Cooking spray
  • 1/4 cup sifted powdered sugar
  • 1 1/2 teaspoons 2% reduced-fat milk

Preparation

  • Preheat oven to 350°.
  • Combine raspberry jam and walnuts in a small bowl.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, and salt in a bowl, stirring with a whisk. Combine sugar, butter, lemon rind, 1 teaspoon vanilla, egg, and egg white in a large bowl; beat with a mixer at medium speed until well blended. Add flour mixture and sour cream alternately to sugar mixture, beginning and ending with flour mixture.
  • Spread half the batter into an 8 x 4-inch loaf pan coated with cooking spray. Spoon raspberry mixture over top, leaving a 1/4-inch border. Spread remaining batter over raspberry mixture.
  • Bake at 350° for 55 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on wire rack. Combine 1/8 teaspoon vanilla , powdered sugar, and milk in a small bowl, stirring well with a whisk. Drizzle over loaf.

Spicy Lentil Soup

I totally feel like i’m cheating by finding another recipe to try, but i did and i gotta say it was worth it!

I saw it – Spiced coconut lentil soup – and totally had to try it!

I adapted it a smidge by uping the heat (and don’t own vegan bullion grains… so went with the non-veggie version – sorry), but other than that kept it the same.

Ingredients:

1/2 large red onion chopped
2 dried red chilis
1 tsp ground bottles ginger
1 tsp bottled garlic
1 cup red lentils
1 400g can coconut milk
3 cups water
1 scant tsp beef bouillon
1 tsp ground coriander
1 tsp paprika
1 tsp cumin
black pepper and red pepper flakes
juice of 1 lime
1 heaped tsp spicy olive oil

Preparation:

  1. Heat the  oil in a heavy based saucepan. Add the onion, season, cover and allow to soften for several minutes.
  2. Add ginger, garlic and red pepper to pan, cover and cook for a few more minutes until the flavors begin to infuse
  3. Rinse and sort the red lentils and add to pan along with the ground coriander, paprika and cumin. Mix thoroughly and then pour in the coconut milk and water. Sprinkle in the  bouillon and lightly season with some sea or kosher salt,freshly ground black pepper, and red pepper flakes.
  4. Cover, bring to the boil and then lower to a gentle simmer for forty minutes, ensuring to stir frequently.
  5. Juice the lime and set aside.
  6. When the lentils have softened and almost disintegrated to form a thick, creamy soup, take off the heat, pour in the lime juice, taste for seasoning and serve with fresh avocado

Fight for Air!

It’s training time!

For the 3rd year in a row, i’ll be “Running the Republic”. That means in February of next year i’ll be climbing 56 flights as fast as my little feet can carry me!

I’ve averaged a little over 13 minutes each year – i’d like to kick some serious butt this year!

I like this race because first off – it isn’t a “race”, there is absolutely no running involved! And second my parents have smoked for about forever, my co-workers smoke constantly and I want to do what I can to make sure research continues and we keep others from starting to smoke!

Bones – cookies

Another find from this or last month’s Family Fun catalog. Who says you need to have kids to enjoy yourself!

I decided to make these yummies and of course only had vanilla almond bark chunks in the house. Sigh. Yeah for target!

I decided to use the mini crock pot to melt the “bark”

FYI – just cause they look they are not melting, don’t be fooled! These bad boys hold their shape like no bodies business!

Next i employed the hubby to create the bones!

It is kinda creepy and weird to smoosh baby marshmallows on the ends of pretzels! The boys enjoyed getting the pretzels that we broke too short!

Next it was team work to coat the bones!

Hubby dropped the bone in the baby crock pot, i smoshed it down to coat then lifted, shook, and placed on the wax paper!

They set up in about 30 minutes!

I started to get a hand cramp holding the fork in that position for so long – but it was definitely a fun project!
